DIY Chocolate & Coconut Almond Butter.

I have a pretty big obsession with nut butters. As my gluten free bread can be pretty awful, I take rice cakes a lot for lunch. Spreading any nut butter on a rice cake is super yummy and a pretty healthy snack too. I'm a huge fan of cashew butter, but almond has become my most recent fave. So when I spotted this post on Bloglovin I was desperate to try and make my own.

I began initally by following the recipe but I gradually got more confident with the mixture and ended up with my own adaptation. I added some desiccated coconut for a little more texture - I'm all about a crunchy nut butter. I also added a little rice syrup for some extra sweetness.

I can' wait to get properly stuck into this jar and who knows, if it's a hit I will never need to buy nut butter again.
