Vegan Caramel Ice Cream.


The biggest thing I've missed since going DF is ice cream. I am absolutely obsessed with ice cream and literally could eat it by the tub full. With that in mind, I've had to try out new "ice-cream" recipes to feed my creamy craving. I've tried a few different techniques, so I thought I'd share one of the latest recipes I've tried. 

1/2 Cup The Raw Chocolate Company Lucuma Powder* 
1 Cup Cashews
1 Tbsp Vanilla Extract
1/4 Agave Syrup
1 Cup Water
Pinch of Salt
The Raw Chocolate Company Golden Berries (Optional)

Pop it all in the blender (minus the golden berries), blitz together and freeze for at least two hours. Then scoop and add golden berries to serve.

The Lucuma powder gives it a really sweet, caramelly flavour. This certainly has a distinctive texture and one that is probably a love or hate thing. It's not my favourite texture but the flavouring is really good considering I can't have caramel being DF. If you're looking for something a little different to your average vegan ice cream, give this a go. Plus you only need a few minutes to whip it up.
